Recipe: Healthy Welsh cakes

Food blogger Ceinwen Jones shares her recipe for these cleaned up Welsh cakes
Ingredients
A classic Welsh cake, this cleaned up, simplified version is perfect for a cold spring morning with a hot cup of tea.
• 500g currants or sultanas
• 300ml tea
• 400g buckwheat flour
• 1 1/2 tsp baking powder
• 3tsp chia seeds
• 1 x egg, beaten
Method
1 Add the fruit into a big bowl with the chia seeds. Pour the tea over and soak overnight.
2 The next day, pre heat oven to 170 degrees. Add the flour, baking powder and beaten egg to the sultana bowl and mix together.
3 The mixture needs to be slightly wet and sticky but not runny. Add more tea if needed in small amounts and pour into a baking sheet lined loaf tin.
4 Bake in oven for 60 mins – though check that a skewer comes out clear first. If it doesn’t, keep cooking for 10 mins at a time.
5 Enjoy, with a mug of tea and the paper.
