Recipe: Chilli beef salad

In the summer you don’t want to be in the kitchen; when the sun comes out you need to be outside soaking up the rays. This light summer salad is perfect - from ingredients to table in 10 minutes
Chilli beef salad (serves 2)
• 200g steak
• 1/2 large cucumber, sliced thinly
• 2 handfuls of spinach
• 8 radishes, sliced thinly
• 3 cloves garlic, sliced
• 1 red chilli, sliced thinly (use less if you’re not too hot on heat!)
• 3 tbs fish sauce
• 2 tbs soy sauce
• 2 tbs sesame oil
• 1 tbs sesame seeds
1 Heat a frying pan on high for a few minutes. Add a small bit of oil/coconut oil.
2 While you’re waiting for the pan to heat up, prepare the dressing.
3 Add the steak to the frying pan, and cook on high for 1.5 minutes on each side.
4 Take the steak off the heat, and leave to rest on a plate while you prepare the salad.
5 Slice the radishes thinly, chop up the spinach and slice your cucumber. Divide evenly between two bowls.
6 Using a fork and a sharp knife, slice the steak into thin strips. Lay these over the salad.
7 Drizzle the dressing over and serve. Summer lunch in less than 10 minutes
