Toss that expensive (and not really healthy) store bought granola out the door, this simple recipe takes just 30 mins and will fill you up for the day with slow release energy
Makes 10 servings
• 200g rolled oats
• 4 x tbs agave syrup
• 3 x tsp vanilla extract
• 3 x tsp cinnamon
• 4 x tbs olive oil/coconut oil (melted)
• 50g pumpkin seeds
• 50g sunflower seeds
• 2 x tsp salt
• 75g sultanas
1 Pre heat the oven to 150 c. Put the oats into a a large mixing bowl. Mix in the agave syrup, vanilla extract, cinnamon and oil.
2 Mix everything together so the oats are covered by the other ingredients. Then add in the seeds and salt. Mix again.
3 Pour into a lined baking tray, and bake for 15 minutes. After 15 minutes, take the tray out and stir the mixture to make sure the oats cook evenly and don’t burn.
4 Return to the oven for another 15 minutes.
5 Transfer to a large jar and mix in the sultanas. The granola will keep for 1-2 weeks. Serve with greek yoghurt and fruit.
