Delicious healthy pancakes

Perfect for that lazy weekend brunch, these little pancakes taste so naughty but are actually packed with protein and have barely any sugar in them
Serves 4
Ingredients
• 4 medium eggs
• 310 ml almond milk
• 4 tsp cacao powder
• 150g coconut flour
• 6 tsp stevia / 4 tsp agave syrup
• 1 tsp rock salt
• 2 tsp baking powder
Method
1 Pre-heat your frying pan to a high/medium heat. As the pan heats up, prepare the mixture.
2 In a small bowl, beat the eggs. Add the milk and whisk for a couple of minutes.
3 Add the flour, cacao, salt, baking powder and stevia and mix into the liquid. Keep stirring until all the dry ingredients have mixed in and the cacao has evenly spread.
4 Spoon the mixture into the frying pan in small 2-3 inch circles.
5 Cook for 1-2 minutes on one side, flip, and cook for 30 seconds on the other side.
6 Serve with raspberries and blueberries
