Recipe: The ultimate steak sandwich

To commemorate the British Sandwich Week on May 8-14, two local culinary chefs have joined in the week-long celebration and have shared their most iconic mouth-watering sandwich. Here Alex Nitka shares her ultimate steak sandwich

(Serves 1)

Ingredients

• Caramelised onion

• 1 tablespoon olive oil

• 1/2 onion finely sliced

• 1 teaspoon caster sugar

• 2 teaspoon balsamic vinegar

• Salt and pepper

Mustard mayo

• 1 teaspoon wholegrain mustard

• 1 teaspoon mayonaise

• 125g fillet steak

• Olive oil

• Salt and pepper

• 40g stilton crumbled

• Handful of watercresS

• 1 Ciabatta

Method

Ciabatta

Preheat griddle pan over medium to high heat, slice ciabatta in half and place on griddle cut side down and cook until crispy and golden, set aside and rinse griddle pan

Caramelised onion

For the caramelised onions, heat the olive oil in a medium frying pan, add the sliced onions and fry over a low heat for 5 minutes. Sprinkle the sugar over the onions then add the balsamic vinegar, turn heat up to medium and cook for 2-3 minutes until its sticky. Set aside

Mustard mayo

Put the wholegrain mustard and mayonaise in a bowl and stir until its evenly mixed.

Fillet steak

1. Preheat griddle pan to med/high heat

2. Season steak with salt and pepper and rub with olive olive oil Place steak on griddle and cook for 1 1/2 mins each side for rare, take out and rest the steak for 5 mins.

3. When rested, cut the steak into strips, it should be pink in the middle

To serve

Place ciabatta on a plate, cut side up and spread the mustard mayo over both sides. Place steak neatly over the top over of one side. Then add the sticky onion mixture over the steak, crumble over the stilton, add the watercress and put the other side of the ciabatta over the top. Cut in half and enjoy one of the best steak sandwiches ever!
